  • 1 teaspoon Black pepper, ground

  • 1/2 cup Chopped onion

  • 1/2 cup Chopped cilantro

For the Tandoori Marinade:

  • 1 cup Greek yoghourt

  • 2 tablespoons Tandoori masala

  • 1 teaspoon Turmeric powder

  • 1 teaspoon Garam masala

  • 1 tablespoon Ginger-garlic paste

  • 1 tablespoon Lemon juice

  • Salt, to taste

  • Red food colouring (optional, for authentic colour)


Instructions:

  • Make the Dough: Mix flour, salt, and water to form a smooth dough. Knead well and let it rest for 30 minutes.

  • Prepare the Filling: Mix minced chicken or vegetables with ginger-garlic paste, soy sauce, black pepper, onion, and cilantro. Adjust salt to taste.

  • Shape the Momos: Roll out small portions of the dough into thin circles. Place a spoonful of filling in the centre, and pleat the edges together to seal.

  • Marinate: In a bowl, prepare the marinade by mixing Greek yoghurt, Tandoori masala, turmeric, garam masala, ginger-garlic paste, lemon juice, salt, and food colouring. Coat the shaped momos in the marinade and let them sit for at least 30 minutes.

Cooking:

  • Arrange the marinated momos on a greased baking tray. Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until they get a nice char on the edges. Alternatively, you can grill them over charcoal for a more authentic flavour.

  • Serving:

  • Serve hot with mint chutney or tamarind sauce.
