OUR STORY
Our journey began in 2010 with the establishment of 16 retail outlets specializing in our signature, in-house, handcrafted Momos. Initially, our operations encompassed both retail and manufacturing. However, as we expanded, we faced challenges in managing both areas. We decided to streamline our operations by focusing on retail, leading us to outsource Momo production. Upon researching the market, we discovered two main types of frozen Momos: machine-made and handcrafted. Initially attracted by the cost benefits, we opted for machine-made Momos. However, feedback from our consumers at our retail outlets quickly highlighted several issues with this choice:

Higher Wastage: Consumers noticed that machine-made Momos had a higher breakage rate, attributed to the high-speed dough stretching in their production. This led to increased wastage and juices leaking from the fillings.

Compromised Flavor: Feedback from our consumers revealed that the fillings in machine-made Momos lacked the juiciness and flavor characteristic of handcrafted ones. This shortfall, we discovered, was due to the limitations of the machines in effectively sealing Momos, especially when the fillings included greasy and slippery components like meat and vegetable fats. Such textures challenged the machine's ability to adapt, resulting in compromised flavor and quality.

Lack of Artistry: Customers missed the intricate, pleated designs of handcrafted Momos, finding the machine-made versions visually less appealing

Perceived Lack of Freshness: There was a common perception among consumers that machine-made Momos were less fresh than handcrafted ones.

Uniformity Over Authenticity: Our customers preferred the authentic imperfections of craftsmanship in traditional Momo preparation, which were absent in the uniformly produced machine-made Momos.

Less Filling: Customer feedback highlighted that machine-made Momos often contained more empty space inside, leading to a perception of lesser value. Our investigations revealed that this issue stemmed from the machines' limitations, requiring wider wrappers to effectively seal the Momos, a stark contrast to the densely filled, handcrafted versions.

Even Thickness Issues in Machine-Made Wrappers: Customers noted that machine-made Momo wrappers, with their even thickness from the center to the edges, frequently led to breakages during cooking or resulted in an excessively doughy texture at the pleating areas. In contrast, handcrafted Momo wrappers are traditionally and intentionally thicker in the middle and thinner at the edges. This intelligent design in handcrafted Momos serves a dual purpose: it minimizes breakages and maintains a balanced dough thickness, especially in the sealing area.

Vegetable Filling Texture Degradation: We received feedback highlighting a noticeable difference in the texture of vegetable fillings in machine-made Momos. The process of passing these fillings through a machine hopper subjected them to physical stress, damaging the cellular structure of the vegetables. This stress caused the vegetable juices to spill out, resulting in a loss of natural texture and juiciness. In contrast, handcrafted Momos retained the integrity and juiciness of the vegetable fillings as they underwent a gentler, manual stuffing process that preserved their natural texture and flavor.
After receiving valuable consumer feedback at our retail outlets, we embarked on a search for handcrafted frozen Momo manufacturers. This search revealed a significant gap in the market; there was a notable lack of organized handcrafted Momo manufacturers in India at that time. The existing unorganized handcrafted Momo manufacturers often struggled with maintaining consistent standards, ensuring proper hygiene and guaranteeing a longer shelf life for their products.
Identifying this market gap, we transitioned from being a retailer facing sourcing challenges to becoming a manufacturer of handcrafted frozen Momos, aiming to solve a larger problem.

We closed our retail outlets and established a state-of-the-art manufacturing facility dedicated to producing handcrafted Momos with an extended shelf life of 9 months. Our range now includes a variety of flavorful vegetarian and non-vegetarian options. We exclusively focus on large-scale manufacturing of handcrafted frozen Momos and Baos, holding an HACCP food safety certification. Our products are distributed worldwide at affordable prices. Our team of over 300 artisans is devoted to the art of Momo making. As a pioneer in this field of handcrafted momo manufacturing , we are possibly the only company in India solely dedicated to the mass production of handcrafted Momos. Currently, we produce between 3.5 to 4 lakh Momos daily.
